Turkey Tortilla Casserole


This is from Rachael Ray and I have made it GF by using all GF ingredients. A simple lesson is learned from this. You do not have to go crazy looking for GF recipes. You can tweak recipes that you would like to try to make them GF. Happy Cooking!
INGREDIENTS:
2 limes, quartered
1 lb turkey breast cutlets
salt
1 lg onion finely chopped
one 4 ounce can of diced chili's with liquid
Two 14.5 ounce cans of Muir Glen's Fire Roasted Tomatoes
One pound GF (Green Mountain Gringo) Tortilla Chips crushed
14.5 ounces of chicken broth (Rachael Ray brand)
1 lb Mexican shredded cheese
1 cup sour cream at room temperature
DIRECTIONS:
1. Preheat a grill pan to medium-high. Squeeze the limes over the turkey cutlets; season with salt. Grill the turkey until just cooked through, 3 to 4 minutes per side. Let cool, then slice into 2-inch-long strips.
2. Preheat the oven to 375°. In a large bowl, combine the onion, the chili's with their liquid and the tomatoes. Add the tortilla chips and turkey and toss well. Transfer the mixture to a greased 9-by-12-inch baking dish. Drizzle with the chicken broth and top with the cheese. Bake until the cheese is golden around the edges, about 40 minutes. Serve with the sour cream.

UNO's Chicago Grill!!!

UNO's Chicago Grill in Maryville, TN has started serving Gluten Free Pizza! It is the best Gluten Free pizza that I have eaten thus far. It is served on thin crust with homemade marinara sauce. You can choose between cheese and pepperoni for your toppings. My son and I chose cheese. We like the pizza so much we ordered a cold one to go so we could bake it later. I recommend that you try this pizza!
